What's for tea?

It's Wednesday, my favorite day of the week. Half of the week is over and I'm so looking forward to a wonderful weekend. I'm in the mood for baking. Well.. I don't actually bake every Wednesday as I'm not really into baking, it's something that I would be happy to do every once in a while and I think Wednesday is always the perfect day to do so.

What's for tea this afternoon? I was checking out some recipes from my blog list the other day and was so tempted to try this raspberries buckle. Quick, easy yet delicious.

Ingredients for the cake:
1/2 cup of butter (room temperature)
1/2 sugar
1 egg
I teaspoon vanilla essence
2 cups flour
2 1/2 teaspoon baking powder
1/4 teaspoon salt
2 cups raspberries
Streusel topping
1/3 sugar
1/3 flour
1/2 teaspoon cinnamon powder
3 tablespoons chilled butter
In a medium bowl whisk together the flour, baking powder and salt. Set aside.
Preheat the oven to 350 degree F. Beat butter and sugar until light and creamy. Add the egg and vanilla essence. Beat until well incorporated.
Add the flour mixture, beat on low speed then add 1/3 of the milk, repeat, alternating flour and milk until everything has combined, pour the mixture into the prepared baking dish and sprinkle raspberries on top. Set aside.
For the streusel topping. In a small bowl, combine flour, sugar and cinnamon powder. Add butter using a fork until the mixture has a crumb-like texture. Sprinkle the mixture on top of the cake. Bake it for 30 minutes. Cool for at least 10 mins before serving.

  3. salam suffia,it looks pretty and yummy will go well with english tea or even lemonade:)re: i bought my garden set from ikea actually when they sell the summer items,they were in dark brown originally but i painted it white,quite cool kan..you can buy the nice bright orange bench cushions and chairpads too.Yeap white can be boring and cliche if you go too far,it will look like any english showrooms but it can be really warm,cosy,easy going and fresh if you know how to mix and match..happy decorating:)
